They aim for a higher orbit than normal as noted and generally try for polar orbit, I think. The higher orbit is well clear of the ISS, for example. The reasons for the trajectory is, as stated in the video, not the fault of Israel in this case, as they would much rather launch prograde if not for the populated areas to the East. As the other commenters pointed out, it would be incorrect to cite religion here for many reasons, including the fact there are more Jews living outside of Israel than in it and almost as many in the U.S. as in Israel.
